Before you freak out at me ;)....this isn't a case of "autism" being "cured"....
the kiddo in this article didn't really HAVE autism, it was undiagnosed Celiac Disease....

Welcome!

A number of friends have asked if they could pass this blog on to people they know who are dealing with "gluten issues"...whether they be from "gluten intolerance" or Celiac Disease or something else...so I thought it was necessary to have a little introduction.

First of all...PLEASE do not use my blog in place of medical advice. I am not a doctor or medical professional or expert by any stretch of the imagination! Also, it is SOOO important to keep up to date of changes in manufacturing of brands/food items when you are choosing to make the recipes or eat the items I post about. Sometimes things that were once gluten free can change and not be okay to eat. Always verify that a food is gluten free before you use it in a recipe or eat it. I'm not responsible for your health and safety...YOU are! :) That being said, I hope you do find some useful tips/recipes on this blog :).

This blog was "born" on October 17th, 2008...2 days after my doctor informed me (for the second time!) that he was pretty darn sure I had Celiac Disease (he later "officially" diagnosed me via "clinical opinion" on December 5th, 2008...but then on May 19, 2009 I discovered via genetic testing that I have NONE of the genes that predispose one to Celiac Disease, meaning I most likely am merely "gluten intolerant"). My journey since October has been bumpy, but full of bright spots as well. This blog chronicles these bumps and road blocks...but also brings to light the encouragement and support I've received from various sources (my wonderful husband, awesome family and friends...both old friends and some great NEW ones as well, great resources both online and in print, and of course my doctors).

Some of the entries are about great food items I have found, others have delicious recipes. Still others are full of "emotional rants". I don't apologize for these...this just serves as a warning :). Proceed at your own risk! If you are reading this, you probably either know how I feel or know someone who is going through what I am...and this can help you better understand what we are going through.

It's not easy living wheat/gluten free in a gluten-filled world! Imagine walking through a grocery store knowing you couldn't have most of what lines the shelves, or not being able to enjoy holiday treats at family/office get-togethers. I say this not because I want pity, just to offer a small illustration of my daily frustrations. It's definitely no fun feeling ostracized! However, the road does get easier (or so I am told :)).
